A Dietician Approved Lunch
Charlotte loves our Miso Tempeh Bowl! We asked her what would be a perfect Mosaic lunch or a quick but impactful dinner, and here's her take:
"This veggie bowl is brimming with gut-friendly foods like tempeh and miso. Tempeh is one of the highest sources of plant-based protein. It’s made from fermented soybeans along with various grains and seeds, making it rich in fiber, too. Eating tempeh has been shown to increase concentrations of good gut bacteria, in large part thanks to its prebiotic fiber content. Miso is a traditional Japanese paste made from fermented soybeans that adds a salty umami flavor, along with friendly gut bacteria, to this bowl."
